[Photo] food!

I made my second meal from my latest Hello fresh delivery this week.  For those that don’t know, HelloFresh is a dinner box service. Each week they create new recipes to pick from and they send the recipes and ingredients right to your door. So you can cook your own meals without having to make a trip to the grocery store. You can skip weeks if you like too! I find the recipes are really easy to follow, but definitely involve some prep time. But it’s great way to get more comfortable in the kitchen and get cooking! If you’re interested in checking them out, use my referral code at the bottom of this post to save $20 off your first order. Don’t worry, they have options for vegetarians as well! Anyway, we made Lemony Sole with Oven-Roasted Potatoes & Artichokes.

I decided to take this dish on alone for selfish reasons. I was hungry and didn’t feel like waiting for Andy to wake up from a nap. This took me about an hour and a half from start to finish. YIKES! I probably should have just woken Andy up. Anyway, we didn’t add the lemon zest because I accidentally cut my hand and the lemon got a little blood on it, YUCK! But now I know in the future just zest a lemon with a grater, it’s a million times easier and I probably won’t cut myself [hopefully]. I also had a hard time flipping the fish filet in the pan, they were too delicate and broke apart. So my pictures aren’t very pretty. Aside from that, the food was darn good!

I purchased the HelloFresh dinner kit on my own. All opinions are my own. To help me get referral points, please use my code! Save 20$ on your first order with my code QFJ5CE at www.hellofresh.com
